Beef & Green Beans’ Tajine

This Tajine is very healthy, great for any season. when I make this recipe it brings tons of great childhood memories. I recommend this yummy recipe for all your family members big and small.

Ingredient:

A

1 lb. (about 1/2 kg) 2 inch beef cubes

1 grated tomato

½ cup chopped parsley, cilantro

½ cup olive oil

1 teaspoons salt (or to taste)

2 teaspoons ginger

1 chopped onion

3 cloves finely chopped garlic

1 teaspoon/ saffron

½ teaspoon pepper

4 cups of water

½ teaspoon paprika

¼ to ½ teaspoon cayenne pepper (if you like it spicy)

¼ teaspoon cumin

1 lb. (about 1/2 kg) fresh or frozen green beans

1 preserved lemon cut to 4 wedges

Cup of Kalamata olives (optional)

preparation:

In a clay Tajine add the onion, the oil, the meat, and All the spices in ingredient *A, and stir for about 10 minutes (to brown the meat from all sides). Add 2 cups of water and cover the Tajine, let it cook. (Make sure you check on it couple of times to make sure it doesn’t dry out) add about one cup of water gradually, until cooked. When the meat is tender about 40 minutes or so, add the green beans, Kalamata olives, the preserved lemons, let it cook about 15 minutes. Reduce the sauce until it is thick, Serve hot with Moroccan, French, or Italian bread.

Serves 5 persons

* if you don't have a Tajine you can sub with crock pot, casserole dish, or regular pot
